如何做香肠
[size=14px]做香肠其实很简单,首先需要准备的是

小肠胰(猪小肠外表皮,有点类似避孕套,具体样子可见第六步)、肉、盐、糖、味精、白酒、绳子、可乐壶的瓶口

[size=14px]脸盆有点湿那是没有关系的。然后你要把肉放进去。

要注意的一点是肉不能大块大块的,要一小块一小块的,因为这个肉是要通过塑料瓶口装入到肠胰里去的。

10斤的肉,要放二两半的盐,二两半的味精,二两半的糖,二两半的白酒。

这是比较容易记的一个数量比例吧,调味剂的量根据肉的重量来定,4:1

另外要说明的一点是,白酒的质量是特别重要的,所以我建议大家不要用普通的,用高度白干。特别棒!

[size=14px]放好了调味剂,要先拌一下,使得均匀,最好用细盐,因为粉粉家只有粗盐,所以吸收可能比较慢。

接下来我们要等半个多小时,这样使调味剂渗入到肉里面。这样就能让无肉的肉,变的香喷喷。*H2vu:p#y?(U

[size=14px]趁中间还要等待,先把肠胰清洗一下,肠胰应该是要早些准备,放点盐在上面。这样可以保鲜。

[size=14px]用水灌既能让里面的脏东西都被水冲出去,又能让肠胰得到扩展。以便在灌肉时比较有效率。E[@ch-poR

时间差不多了,现在可以开始灌香肠了。$V hTC

把拌好的肉通过可乐壶的瓶口灌到肠胰内,再用分节的绳子一段段系好(注:每节肉不要挤的太结实)G*wK2b;y
