滤粉是在桂北才有的一种粉,一般用糯米做的。粉很香,配料很多,剁得很碎的头菜、芹菜、花生、葱、肉末等等。[/align]

知道滤粉是怎么做出来的吗?首先要把糯米泡一晚上,第二天滤干水打成粉,然后调成很黏的米浆,然后把一大锅水烧开,用一个有很多筛子眼的铁盆往开水锅里均匀的滤下米浆,粉熟了捞出来直接装碗,加调料,淋上辣椒油,味道超级好!一般都是现做现吃。

烧蔗粉。外面一层网状猪油裹着肉馅炸得香喷喷,超级好吃!

油茶。我们管做油茶叫打油茶。做的时候先热油锅,把阴米放下去炸,然后捞出来装好,然后再把茶叶放到油锅里炒,炒一会再加一瓢水煮,这就叫煮茶水。吃的时候呢,就是用茶水泡着炸好的油茶米吃,撒一些葱花沫,很香很好吃,常常用来待客。

炒螺蛳。炒螺蛳之前一定要用八角、桂皮、花椒、葱头、姜、蒜等爆锅,然后再放螺蛳一起炒,炒得闻到香味了,加酸辣椒和干辣椒,还有酸笋、紫苏,再加一点水一起煮。

大前年去过一次桂林,因为跟着旅游团去的,所以没吃过什么号吃的,记的印象比较深的就是桂林米粉,比我们这做的好吃多了。

第一个是生榨粉!那粉据说是发酵过的,带股酸味,一般人吃不惯,
所以我没敢尝试:sleep 南宁的螺蛳粉经过改良,几乎已经没有用螺蛳汤煮的了。不知道柳州还有吗?别的那几个小吃,市面也几乎绝种了,
