自貢菜之--冷吃兔[12P]
冷吃兔从小就在吃,印象中都是爸妈炒一大碗放在桌子上,然后每顿都吃几块,每顿吃的时候要把晚底的翻上来吃,还有就是要把吃完后碗里面的油放在面中干拌来吃,麻辣干香回味无穷。。。。。。x:pg*w2I(qL
做法如下:

主 料:鲜兔1只,毛重4.5斤

配 料:菜耔油、盐、老抽、生抽、醋、姜、葱、蒜、花椒、干辣椒等_t*QJu)nl
步骤:1、兔子宰切为约2CM见方的丁,海椒切段,姜切片,葱切段,蒜切片备用;-J.m%aeD7hz7tT,|
2、将姜片、蒜片、葱段放入兔中,加入料酒适量码味20分钟左右;

3、热锅下油(油尽量多,以免兔肉粘锅),将兔肉炸至金黄色(大火,掌握好火候和炸制时间,以免兔肉肉质发硬);

4、继续翻炒兔肉,加入盐、老抽、生抽、姜片、蒜片、花椒、葱段翻炒出香味;@%M/T.VP4~pn-W
5、依照个人口味加入干海椒翻炒入味(如果口味重可加海椒和花椒面),起锅装盘。/z3^s2wE
