【原创】双皮奶[11P+1P验证]

双皮奶是广东特色的甜品,起源于广东顺德,味道香甜;但是做法比较讲究,我这里就发一个自己弄的,不算成功的自家做法。

步骤1:把一碗牛奶倒入小锅里,煮熟

步骤2:拿出一个鸡蛋z;belb/O/v$E+~&I

煮熟的牛奶和蛋清

步骤3:把煮熟的牛奶倒入碗中,把碗放入冷水中冷却,让牛奶表面结一层膜,这就是第一层的奶皮

步骤4:待奶皮结成后,在皮上捅个小洞,缓慢的把牛奶从碗中倒入装有蛋清的碗里,记得千万不要弄破皮(这是难度最高的动作)o\H"a5q&[0E

步骤5:搅拌蛋清和牛奶,使其搅匀,倒入一至两勺的白糖

步骤6:把搅拌好的牛奶蛋清,沿碗边缓缓倒回有奶皮的碗中,让奶皮浮于表面(高难度动作2)x1c

步骤7:把上述步骤的碗,放入蒸笼里,蒸熟就可以了

个人点评及注意事项:

1.做双皮奶的步骤,难在倒奶的时候,不能把奶皮弄破,可是很多人都控制不了,我自己也失败过很多次,其实无所谓,只不过有奶皮盖在表面,蒸出来的双皮奶会香点而已
